This premium program offers a high-level cultural and practical immersion into the world of French gastronomy. It is designed for participants wishing to specialize in the culinary field, particularly within an academic or professional framework. Conceived as an exclusive experience, the program combines in-depth theoretical exploration with handson practice, as well as encounters with renowned artisans and chefs, providing insight into France’s rich gastronomic heritage. More than a course, this summer program offers a comprehensive exploration of French culinary art in its cultural, historical, and contemporary dimensions.

Mornings are dedicated to masterclasses and practical case studies, complemented by a collective project carried out in small groups. Throughout the program, participants are introduced to French gastronomic vocabulary, its origins, and its international influence.
Afternoons extend this thematic immersion through cooking and pastry workshops, professional encounters, and a private gastronomic experience in collaboration with the Ritz-Escoffier School.

Collective projects

From the very beginning of the program, a theme is assigned to each small group. This collective project, presented on the closing day, runs throughout the entire program and is enriched by theoretical input, case studies, visits, and professional encounters. It also encourages group dynamics and social interaction from the very first day.

workshop followed by a private tasting, held in
the kitchens of the renowned Ritz-Escoffier
School at Place Vendôme.
